MOM'S BASIC COOKIE DOUGH
• ¾ cup packed brown sugar
• ¾ cup sugar
• ½ cup butter, softened (1/2 package from Hero)
• ½ cup shortening
• 1 tsp vanilla
• 2 eggs, beaten
• 2 ¼ cups flour
• 1 tsp baking soda
Cream the sugars and the butter and shortening. Add the vanilla and eggs and mix, then the rest of it. You can use it immediately, refrigerate, or freeze this dough. I think it does best after being refrigerated a few hours.
SUGGESTIONS:
CHOCOLATE CHIP COOKIES
Basic dough, add in a bag or two of chocolate chips
PEANUT BUTTER CHOCOLATE BARS
Add:
• 1 ½ cups oatmeal
• 1 cup peanut butter (1 small jar)
Spread it in a jelly roll pan (pan with sides). Bake at 400 degrees about 15-20 minutes. It should look pretty firm, a little browned around the edges.
• 1 bag chocolate chips
Sprinkle the chocolate chips on the dough and return to the oven for about 3 minutes, until they are shiny. Take the pan out, and spread the chocolate over the cookie part. Let cool, then frost.
Frosting:
• 1/2 cup peanut butter (1/2 small jar)
• ¼ cup evaporated milk
• 1 ¼ cups powdered sugar (may need more)
Mix together and frost the brownies.
These are the ones I put sprinkles on the other night. We discovered that they are even better frozen!
ALSO:
Just add 1 cup peanut butter for peanut butter cookies
Add 1 cup peanut butter and 1 cup oatmeal, along with a package of chocolate chips. These were my kids’ favorite cookies when they were growing up. They didn’t know that I also put a jar of baby food carrots in them, and reduced the sugar by ½ cup. When they were teenagers, they finally figured out that the baby food on the pantry shelf was not just leftover.
Add 1 cup oatmeal and raisins or dried cranberries.
This recipe can be cooked in either cookie form or bar form, with almost anything added to it, and frosted or not.
